CHERRY CRISP



Fruit crisps are one of my favorite parts of the overabundance of fresh fruit associated with summer. No matter what you throw under that crisp, crumbly topping.

PREP TIME: 25 mins
COOK TIME: 35 mins
YIELD: 6 to 8 servings

INGREDIENTS: CRUST

1/4 teaspoon - salt
1/2 cup - packed brown sugar
1 cup - all-purpose flour
1/2 cup - cold butter
(cubed)

INGREDIENTS: FILLING

1 cup - sugar
1/4 cup - cornstarch
1 cup - cherry juice blend
4 cups - pitted tart red cherries

INGREDIENTS: TOPPING

1-1/2 cups - quick-cooking rolled oats
1/2 cup - packed brown sugar
1/4 cup - all-purpose flour
5 tablespoons - butter
(melted)

DIRECTIONS:

1. Pre-Heat oven to 350° degrees.

2. In a bowl, combine salt, sugar, flour, and
   cut in the butter.

3. Press into a greased, 2 quart, or 11 x 7 baking dish.
   and Bake at 350° degrees for 15 minutes.

4. For the filling, combine sugar and cornstarch in a
   saucepan. Stir in juice. Cook over medium heat until
   thick, stirring constantly. Fold in cherries.

5. Pour filling over baked crust.

6. In a bowl combine oats, brown sugar, flour,
   and melted butter.

7. Sprinkle topping over filling.

8. Bake for 20-25 minutes or until golden brown and
   bubbly around edges.

9. Serve warm or cold, with your favorite ice cream,
   cool whip, or whipped topping. Enjoy !!
