EARTHQUAKE CAKE



This cake is not the prettiest cake you'll ever make, but it might be the tastiest. So tasty and delicious, it is the perfect answer for those times when you need a dessert that is super easy to make!

PREP TIME: 30 mins
COOK TIME: 40 mins
YIELD: varies

INGREDIENTS:

1 cup - coconut flakes (optional)
1 cup - chopped Pecans (optional)
1 box - German Chocolate or Double Fudge Cake Mix
1 package - cream cheese (8 oz.)
4 cups - confectioners’ sugar
1/2 cup - butter
1 teaspoon - vanilla extract
1 bag - chocolate chips

DIRECTIONS:

1. Preheat oven to 350 degrees.

2. Lightly grease the bottom and sides of
   a 9 x 13 inch baking pan.

3. Layer coconut and pecans in the bottom of pan.

4. Prepare the cake mix according to the instructions
   on the box.

5. Now pour the cake batter over the pecans
   and coconut.

6. Combine the cream cheese, butter, vanilla, and
    confectioners' sugar. Mix and beat until smooth.

7. Now pour this mixture over the cake mix.

8. Bake at 350 degrees for 40 minutes, maybe more.

9. For best results - check your cake after 40 mins
   to make sure the bottom of the cake is cooked using
   the toothpick test - This means poke a toothpick
   into the cake until the toothpick does not have gooey
   cake on it from the bottom.

10. Once you remove the cake from the oven, sprinkle
     a handful of chocolate chips on top of the cake
     while its hot.

NOTE: You could use Hershey's syrup instead of chips.
